Meat Cutting School

Meat cutting schools once dotted the landscape; however advances in technology and boxed meats caused these schools to close so the art of whole carcass cutting began to fade.  The University of Kentucky Meat Cutting School has brought back the tradition of teaching whole carcass meat cutting and the art of making high quality sausages.  The UK Meat Cutting School offers various workshops on new meat cutting techniques and sausage making, along with traveling Kentucky and the rest of the United States conducting meat cutting demonstrations.  The instructors work with Kentucky’s meat processors to train new employees, teaching new meat processing techniques, and proper humane harvesting practices.
