Partnering with local Kentucky and Tri-State food producers and the University of Kentucky Food Systems Innovation Center (FSIC) program to design and analyze the physical, chemical, nutritional, and microbial properties of food products

Training of graduate students, FSIC interns, and undergraduate students in the craft of food development, culturing microorganisms, and conducting analytical tests

Maintenance and characterization of numerous microbial cell lines for student research, custom FSIC microbial challenge studies, and usage in wet teaching laboratories
