Meat Science Facilities
The University of Kentucky Meats Science Laboratory is a fully functional, USDA inspected meat processing facility. The facilities include an abattoir, carcass coolers, cutting room, meat grinders and sausage stuffers, a smokehouse, a blast freezer, and rooms dedicated to Country Hams and dry-cured (charcuterie) artisan sausages. The beef, pork, and lamb are sourced from the UK farms in Woodford County or the satellite farms at the Research and Education Center at Princeton. All animals utilized by the UK Meats Lab are intended for research and/or teaching. The UK Meat Lab allows our students to gain valuable hands-on experience in the meats and livestock industries. Once the research data is collected and teaching has concluded, the meat is merchandized through the UK Butcher Shop, which is open to the public Wednesdays and Friday from 1:00 to 5:00pm.
